I already have the stems for We Are Number One (e.g. vocals) but I want to also have stems for other LazyTown songs, like the Mine Song, at least instrumental versions of them. Does anyone have them?

Almost all seasons 1-3 instrumentals have been released on LazyTown cd's. LazyTown has not released vocals for anything except We Are Number One. Many fans have made vocals themself using the HQ versions of the songs and isolating parts of it. -

You can easily find instrumentals to all the S1-3 songs of LazyTown on YouTube.
