Welcome to another audio changing guide, with your host... uh, some guy.
This time we're going to use a rather interesting program named MKVtoolnix which has MKVMerge in it. Here's what you'll need:
MKVtoolnix, choose your OS here: http://www.bunkus.org/videotools/mkvtoo ... loads.html
[Optional] MKVExtractGUI, found here: http://coreforge.org/projects/mkvextractgui/
You're going to need to install MKVtoolnix to continue. For this little guide, we'll be using the Windows version, XP to be specific. For the optional MKVExtractGUI, download the .zip file and extract the contents to where you installed MKVtoolnix. The file mmg.exe is actually MKVMerge. Open up that .exe file and you'll get the following window.

*Random Windows Tip 1: You can create a shortcut of nearly any file or .exe file. To do that, right-click on the file you want, and choose Create Shortcut. A little shortcut file will appear and you can move that anywhere you want like the Desktop. Now you can execute that file or .exe anytime you want from the Desktop.
For this little How-to, we'll be using the familiar file, LazyTown.108.Sportafake.WS.xvid.dual.en-us-uk.avi
The mmg.exe is actually a GUI, or Graphical User Interface. The beauty of this is you can drag-ang-drop! Just go to where your files are and drag those files on top of the MKVMerge window above and drop it! The alternative is to add them one at a time by clicking on the add button near the top right area of the window and browse to the file(s) you want. :)
Alright, so I opened the above .avi file with MKVMerge, the window should look like this:

Note that you can also open a .mkv file with this program as well. ;) The .mkv you add to this program will also keep the options like Language and Track name.
Before removing or adding an audio track, remember that I place the US audio track first and the UK audio as the second. ID 1 and ID 2, respectively. Ok, to remove a track here, just uncheck it! Click on the little box to the left of the AC3 to uncheck it. :) All that's left is to save it. There will be optional items you may do before saving which will be explained after saving.
Optional Stuff
You can choose where to save and what file name to have by clicking on the Browse button under the Output filename section. Click on the Start muxing button near the bottom left and the program will pop-up a status window. Wait until it's finished and now you have a finished file.
You can also give a track name if you decide to. The Language is a little tricky. The program does not remember it when you first select it. You can test this by choosing a Language and then clicking on another track above then back again. You'll notice that it went back to und (Undetermined). There is a strange fix that I found. Choose the Language you want, eng (English)] for this example, click somewhere like in the Track name section so that the Language option is no longer selected. Now click on the Language drop-down box again with the eng (English) selected and press enter. The program should now remember the Language option.
Another optional thing is adding in subtitle files. Like the .SRT files I keep on advertising. Just drag-and-drop them. :)
You can use MKVExtractGUI to extract files from a .mkv file. For example, if there's a typo or something in an .srt file, use that to extract it and edit it, then you can plug the new one back in with MKVMerge. :)
